Introduction to spices

The term spices and condiments refers to the natural plants or vegetable products or their mixtures that are virtually indispensable in culinary art.

- They are used in various forms such as fresh, ripe, dried, whole, broken and powdered.

- They impart aroma, taste, flavour, color and pungency to food.

- Spices and condiments are one of the most important agricultural products of India. Therefore India also known as ‘’land of spices’’.

- The use of spices and condiments is there in flavouring foods, in medicine, in pharmaceutical, in perfumery and in cosmetics as well as in religious rituals.


Classification


There are about 70 spices grown in different parts of the world, though most of them in India. Spices are classified according to the parts of plants from which they derived.

These are:

1. Fruit spices like Cardamom, chilies and pepper.
2. Seed spices like Aniseed, Caraway, Celery, Coriander, Fenugreek, Mustard and Nutmeg.
3. Flower spices like Cloves and Saffron.
4. Bark spices like Cinnamon.
5. Root spices like Ginger, Garlic and Turmeric.


Curative Properties

Many of the spices and condiments possess medicinal properties and have a profound effect on human health, since they affect many functional processes. These spices have curing property to cure several common ailments.

Some of these properties are as below:

1. Anti –Gas Activity, associated with aniseed, asafeotida, bishop’s weed, cinnamon, cloves, fennel seeds, garlic and mint.

2. Anticoagulant Activity, this is mainly with spices like chilli, pepper, cloves etc.

3. Antidepressant Activity, is associated with spices like cardamom, chilli, pepper and garlic.

4. Pain killing Activity, is associated with asafeotida, bishop’s weed, cloves, mustard seeds, nutmeg and poppy seeds.

5. Mucus-Clearing Activity, the spices like aniseed, asafeotida, cloves, fennel, tamarind and turmeric are rich in this property.

6. Antibacterial Activity, is associated with garlic, cumin seeds, ginger and turmeric.

7. Anti-Diabetic Activity, is mainly with cinnamon, curry leaves, fenugreek seeds/ leaves and garlic and onion.

8. Anti-Diarrhoeal Activity, is associated mainly with garlic, fenugreek seeds, nutmeg, turmeric and mint.

9. Sex Stimulating Property, is mainly with asafeotida, bishop’s weed, cardamom, fenugreek seeds, garlic, ginger, nutmeg, tamarind and pepper

10. Anti-Inflammatory Activity, is with spices like garlic, tamarind and turmeric.

11. Anti-Viral Property, is associated with basil, cinnamon, ginger and turmeric.

12. Calming and Sedative Property, is mainly with spices/ condiments like aniseed, cumin seeds, nutmeg etc.
